Marzipan production has a monastic tradition that goes back decades. However, the origin of marzipan probably lies in the Orient. There, the delicious almond-sugar mixture was served as the crowning glory of the culinary delights at the table of the caliphs.
Marzipan came to Europe through the Crusades, where it was initially produced by pharmacists and was still considered a medicinal remedy until the 18th century. Confectioners began to shape the simple marzipan loaves by hand into artistic shapes and figures and to offer them for sale.
